Keto Chocolate Pudding

Ingredients

For the Pudding

  • ⅔ cup Granular Swerve Sweetener
  • ½ cup cocoa powder
  • 1 teaspoon xanthan gum
  • ¼ teaspoon salt
  • 2 ¼ cups heavy cream
  • 1 teaspoon vanilla extract
  • For the Whipped Cream (Optional)

  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons Granular Swerve Sweetener

  • Equipment

  • Medium saucepan
  • Whisk
  • Medium bowl
  • Plastic Wrap

  • Instructions

    For the Chocolate Pudding

    1. In a medium saucepan, combine Swerve, cocoa powder, salt, and xanthan gum. Whisk well.
    2. Cook over medium-low heat, whisking frequently. Don't let mixture come to a rolling boil. It should cook gently and slowly. Heat and whisk until pudding is thick enough to coat the back of a spoon.
    3. Remove from heat. Stir in vanilla extract.
    4. Pour into bowl or other container. Cover tightly with plastic wrap. Refrigerate overnight or until firm.
    5. For the Whipped Cream (Optional)

    6. Mix all ingredients in a chilled metal mixing bowl. Use a hand mixer or whisk, and mix until stiff peaks form, approximately 5 to 8 minutes.
